Harvest at Optimum Moisture
Grain is cut at 12–14% moisture — the window where it stores best. Threshed within 24 hours to keep the germ intact and the grain's natural nutrition undisturbed.
Natural Sun Drying
Grain dries on raised bamboo platforms for 3–5 days under natural airflow. No mechanical dryers — because heat at this stage damages the grain's natural oils before they even reach the mill.
Cold Stone Milling
Our on-farm granite stone mill runs below 40°C throughout. High-speed roller mills run hot enough to cook the germ — damaging the natural oils and nutrients that make whole grain flour worth eating. Ours don't.
Nitrogen Flush Packaging
Flour is packed immediately into kraft bags with a nitrogen flush to displace oxygen. This prevents the flour going stale or rancid — giving it a stable 9-month shelf life with no preservatives of any kind.
